Thankful Thursday

Today I am linking to Rhondi at Rose Colored Glasses for Thankful Thursday. I have sooooooo much to be thankful to my God for. He has and is blessing me tremendously. I am thankful for my husband, family, home, church, and so much more but I think today I am especially thankful for God blessing our family with another little grandson to come in July. He will be just as sweet as the last one. Thank you God.

Oh no, not another one!

We found out today that Jamie and Kacee are having another sweet little boy! I would have loved to have had a little girl but Noah will love having a little brother he can play with. They will be so close in age and will have so much fun. I can't wait.

I am so excited! We get to find out on Monday what our next grandchild is. Do we get an Audrey Claire or another boy which there is no name picked out yet. Bet you can guess what Kacee is wanting.
Do I have a recipe for you today. It is so good and so easy. I found this recipe on a blog called Southern Plate. I'll post the link on here at the bottom. It is called "Southern Hoe Cake". This "cake" has only three ingredients, takes less than 5 minutes to mix up and less than 30 minutes to cook AND can be fixed in my iron skillet. I love using my iron skillets, they are awesome.


Southern Hoe Cake

2 cups self rising flour
1/2 cup shortening
1 cup milk

In your iron skillet, pour in enough oil to cover the bottom plus a little and heat in 425 degree oven.
In the flour add the 1/2 cup shortening and cut in. Mix the milk in making a wet dough. After the skillet is very hot, pour the batter in. This should sizzle, that's what makes it so crispy and good. Bake this for 15 to 20 minutes or until the top is brown. Invert onto a plate and eat. My Valentine forever

Today I want to honor all of my valentines but especially my all time favorite, Gary. Bet you thought I was going to say Noah. Well, he is my newest valentine but Gary has to be my favorite. He has always been there for me, he has honored his vows being there through thick and thin, rich and poor. We are going on 38 years together. And that's just the married part. We have known each other much longer than that, and yes, we are high school sweethearts. AWWWWW!!! What a sweetie he is and sometimes what a bear he is but that's OK too. All you have to do is look at this picture.

Isn't he a cutie pie?! Happy Valentines Day to all my sweetie pies. I love you dearly.

More snow

Snow, Snow and more Snow!!!! Ok I think I am about done with wanting snow. I have really enjoyed it but am now ready to go to the BEACH!!!!!! Wish that was happening this year and maybe it will. I have the travel bug again, really bad. I don't know exactly where I'd like to go because right now I still can't do much walking so maybe that means I should go to the beach. Just lay back in that beach chair and take it easy. Let the old knees heal up some. What do you think? Yeah me too. Beach it is.
